It took a few more starts than many punters predicted, but I Am Caviar became the latest foal from Black Caviar to win a race when successful in the Vale Dean Holland Plate that kicked off Monday's Bairnsdale card.

The son of I Am Invincible streeted his rivals by 3-1/2 lengths as a $1.75 favourite in the 1000-metre event, which was his fourth trip to the races.

He finished fifth at $1.28 at Moe on debut, was gelded after failing to beat home a rival home at Pakenham at his second start and finished second as a $2.60 favourite first-up at Cranbourne.

The Peter Moody-trained three-year-old joins Oscietra (Exceed And Excel), Prince Of Caviar (Sebring) and Invincible Caviar (I Am Invincible) as progeny of the unbeaten 25-time winner to have won.

Ready For Caviar (More Than Ready) was retired after two starts, while Out Of Caviar (Snitzel) did not make it to the races.

Billy Egan had his first race ride aboard I Am Caviar at Bairnsdale, but recently rode him in trackwork and was impressed with his development.

"He gave me a good feel last Tuesday, so even though he didn't beat much I was pretty happy with the manner he did it," Egan said.

"He's still slowly figuring it out, but I'd say watching most of his replays and the way he's raced today there's been nice improvement and each run he's got a little better.

"He really rounded out the race today and conserved a bit of energy mid-race, which I think he's been struggling to do."

Black Caviar returned to I Am Invincible after having I Am Caviar in the spring of 2019 but missed before visiting Written Tycoon in 2020, a union that produced a filly that is now a yearling and has been named Persian Caviar.

She missed to both Extreme Choice and I Am Invincible in 2021 and last year made a visit to The Autumn Sun.
